Meal Plan Monday


Weekly Meal Plan for May 11-May 17

1. BBQ Chicken Apple Quesadillas, Coleslaw, Green Bean Feta Salad
*We made picnic food for Mother's Day, so pairing leftover salads with a simple entree

2. Lemon Parmesan Chicken Piccata, Mashed Potatoes, Roasted Broccoli
*Mashed potatoes and roasted broccoli are favorites around here. I find it is often easier to introduce a new recipe with Keira if there is at least one thing on her plate that she loves.

3. Shoyu Chicken, Hawaiian Macaroni Salad, Apple Cheddar Spinach Salad
*We LOVE Hawaiian food at our our house, so I'm trying my hand at making Shoyu Chicken!

4. Meatball Tatertot Casserole, Summer Salad
*Meatball Week for the girls and this is Moira's meal choice! The recipe calls for frozen meatballs and cans of cream of chicken soup. We are going to use homemade ingredients for both of those.

5. Meatball Sub Skewers, Zucchini Fries
*Keira's meal choice for Meatball Week because anything on a stick is fun!

6. Honey Garlic Chicken, Roasted Asparagus, Rice
*I love crispy fried chicken and this Asian inspired version has my mouth watering

7. Pork Tinga Sopes, Beer Chicken Sopes, Black Beans, Mexican Stuffed Zucchini, Pico de Gallo, Tomatillo Salsa with Avocados, Tortilla Chips
*Going to have a Mexican Feast!

So originally the theme I chose for the girls this week was ground beef. Moira chose first and when Keira saw that Moira chose meatballs, well Keira wasn't to be outdone. So, Meatball Week it is!
