Mexican Pizza

We're not big football peoples at our house. Unless we're rooting for our hometown college team (GO BEAVS!). So, the Super Bowl isn't a big event at our house. We will turn it on to check out the commercials, and the guys will get sucked into the game. But all in all, we're more about the food and the ads. Well, at least I am. And if the game doesn't get turned on? Well, it's not a tragedy at our house. But no matter what, it's an excellent reason to have snack 'ems all day on Sunday, whether the game is on or not :)

Now, this pizza is inspired by every single Mexican pizza out there. And my family's love for Mexican style food. And courtesy of the fact that I happened to have a batch of fresh pizza dough I had made hanging out in the freezer. Waiting. So, if you make your own dough, go ahead and use your favorite recipe (I'm still working on perfecting mine). Or if making your own dough isn't something you're ready for (it has taken me a long time to become comfortable making my own), then store bought is just fine. I used the canned, refrigerated stuff for years without any complaints from whoever ate it. Of course, those people could just be intimidated by me. Or you could use fresh pizza dough from a local bakery or grocery store (grocery stores usually have it in their deli section).

Assembly is really easy and it cooks up quickly because you pre-bake the crust, throw on the toppings and put it back in to melt the cheese. Serve it up in big slices for dinner or small-two-bite pieces for a party. Have a buffet of sour cream, guacamole, salsa, and hot/taco sauce for those who desire it. This pizza will definitely be seeing lots of repeat performances in our house. On a side note, one pizza fed our house of four adults with NO leftovers. So for a large Super Bowl party? I would consider doubling the recipe.

Mexican Pizza

1 lb ground turkey, chicken or beef
1 Tbsp taco seasoning
1 batch of your favorite fresh pizza dough
2 tsp corn meal
2 cups refried beans (1 15 oz can)
1 cup mozzarella cheese, shredded
1 1/2 cup cheddar cheese, shredded
Assorted toppings: sliced olives, diced tomatoes, sliced green onions, black beans, corn

Preheat oven to 400˚ F. In a medium pan, over medium heat, brown ground turkey, about 5-10 minutes. Add in taco seasoning and mix well (if using ground beef, you may want to drain off any excess grease before adding in seasoning). Set aside for later.

On a large baking sheet/jelly roll pan (the kind with the sides), sprinkle the cornmeal evenly. Lay out the pizza dough and shape until it covers the entire pan. Depending on the type of fresh dough you use, you might find it easier to roll it into the rectangle shape on a lightly floured surface first. The center of your dough should be thinner than the edges to give it a crust. Bake for 7-10 minutes or until lightly browned. Remove from oven.

Spread with refried beans. Sprinkle with seasoned ground turkey. Cover with shredded mozzarella and cheddar cheeses. Top with any of your desired toppings. Return to oven and bake for another 5-10 minutes or until the cheese is completely melted. Allow to cool slightly. Transfer to a large cutting board and cut into desired sizes. Serve with sour cream, guacamole, salsa, and hot/taco sauce.
