Avocado Egg Salad

Are you still knee-deep in hard boiled eggs? Tired of the usual deviled eggs and egg salad? Well, I may have the solution. As inspired by Pinterest. Avocado Egg Salad. I wanted to keep it simple because I absolutely LOVE avocado. So less is more. Like only FIVE ingredients. But this can also be jazzed up if you're feeling it. Add in a little bit of chopped green or red onion, chopped spinach, a squeeze of lemon juice. Or maybe you want it a bit more zesty? Try adding in a bit of prepared horseradish, Siracha, or your favorite hot sauce. And then stuff it between a couple pieces of bread, on top of some crackers, or even rolled up tight in a tortilla. The important thing is to eat it the way YOU like it. Oh and to use up some of those extra hard boiled eggs that you might have laying around from Sunday.

Avocado Egg Salad

3 hard boiled eggs, peeled and diced
1 medium/large avocado, peeled, de-seeded and chopped
1 Tbsp plain greek yogurt
1 tsp dijon mustard
1/2 tsp yellow mustard

Add all ingredients in a medium bowl and stir to coat. Taste and adjust seasoning as needed. Serve how you like.
