I hope you all are getting the last bit of summer in this weekend. Enjoying nice weather while it lasts.... Adam's gonna be working on the house :) You know, because of the good weather. And there's nothing he'd rather do with his two day weekend. Ya, I said two day weekend. He's not lucky enough to get three days, and he's not lucky enough to not have to work on the house this weekend. It's gotta get done. Like as in "done by the end of September" done. Besides, when our weather here decides to change, it will start going downhill in a hurry, so he's gotta take full advantage of it while he can.
And I?? I will be chasing after Moira this weekend because last week she finally decided she was brave enough to let go of every surface known to man and walk. On her own. I will also be buying her a REAL pair of shoes this weekend. I can't bare to think of her little toes getting all scraped up and she desperately wants to be outside. And I'll also be making this.
Garlic Rosemary Marinade. Slathered on chicken. But would be really good on pork tenderloin. Or steaks. Steaks that are topped with sauteed mushrooms. Hmmm, maybe I'll do steaks instead....
Rosemary Garlic Marinade/Rub
4-6 cloves garlic, minced
3 Tbsp fresh rosemary, removed from stems and finely chopped
2 Tbsp olive oil
Juice and zest from one lemon
1/2 tsp fresh ground black pepper
1/4 tsp kosher salt
In a small bowl, combine all ingredients. Pour over and rub into 1 pound of meat. Cover and refrigerate for at least two hours. Remove from refrigerator 30 minutes before grilling.
