Crockpot BBQ Ribs

Growing up my family cooked ribs one way. Marinated in the soy sauce marinade and then grilled on a charcoal grill to perfection. Combine that with my dislike for all things barbeque-saucy and I can tell you that I didn't enjoy my first taste of slow cooked ribs slathered with barbeque sauce. For those that live in barbeque capitals (or love their BBQ food) this probably sounds blasphemous, but it was the way things were. Until recently. Once you've had GOOD BBQ, you can't go back and you constantly compare everything BBQ to the good stuff.

So, since finding a wonderful recipe for BBQ sauce and then another one for BBQ rub, I have been on the lookout for ways to use them. And although both are great on a simple chicken breast for a quick easy meal, I wanted to achieve BBQ greatness at home. Succulent, fall-off-the-bone meat.Without any specialty equipment. Without having to smoke anything for hours upon hours. Without a ton of clean up afterwards.

Well, I suppose the clean up is relative. And you do have to let the meat cook for a few hours. But you don't have to have any special equipment. No industrial smokers or rotisseries. Just a crockpot, a cookie sheet, a wire rack that fits on the cookie sheet, and a saucepan. And clean up is just those few items. You could serve these ribs straight from the crockpot, but the additional leg work required to get them perfect it totally worth it.

Crockpot BBQ Ribs

6 lbs pork baby back ribs (approximately 2 racks)
4-6 Tbsp barbeque rub
3 cups barbeque sauce

Rinse off ribs and pat dry. Rub each rack of ribs with 2-3 Tbsp of barbeque rub. Place racks into a 4 quart crockpot with the meat side of the ribs facing outwards. The two racks of ribs should look like horseshoes when you see them from above. Pour the barbeque sauce over the top of the ribs. Cover and cook on low for 7 hours. Line a sided cookie sheet with foil. Place wire rack on top of foil. Remove ribs from crockpot (be careful as the ribs will want to fall apart) and place them on the wire rack, meat side down. Skim fat off the top of the sauce and discard. Pour barbeque sauce into a saucepan and reduce by half over medium-high heat (about 5 minutes). Preheat broiler. Baste ribs with reduced sauce. Place under broiler for 3 minutes. Turn ribs over and baste with more sauce. Return to broiler for another 3 minutes. Remove from oven and slice the ribs between the bones. Serve with extra sauce alongside.

Note: If you cook both racks of ribs in the crockpot, but only want to use one rack for dinner, the other rack and some of the sauce can be transferred to a bowl or container and saved for later in the week. Also, this recipe would be great for a football/tailgating party. Just prepare as directed. After cutting the ribs into individual servings, place back in crockpot with reduced sauce and keep on warm during the party.
