Prosciutto Wrapped Avocado With Goat Cheese


When you're throwing a party, there's nothing better than easy noshables. You know, the kind of food people ooh and ahh over, but takes just minutes of prep work. Allowing you to appreciate (and even hear) all the gushing compliments on your food. This is one of those kind of snacks. Whether for a party or as a precursor to dinner to keep your family out of bags of chips just minutes before dinner.

I have to admit that Adam is not a fan of anything with avocado. And he doesn't much care for goat cheese either. So, if you're anything like my husband, than these are NOT for you. And it's totally cool. Because it leaves more for the rest of us.

Prosciutto Wrapped Avocado With Goat Cheese

1 ripe medium avocado
12 slices prosciutto, approximately 8" long x 3" wide
3 Tbsp goat cheese

Cut the avocado in half length-wise. Remove the seed from one half and gently remove peel from both halves. Slicing from top to bottom, slice each half into 12 slices. Cut prosciutto slices in half so they are 8" x 1 1/2". Place 1/2 tsp goat cheese and place it in the rounded part of each slice of avocado (the place where the seed had been). Place each slice of avocado with goat cheese at the top of the prosciutto slices. Gently roll the prosciutto around the avocado and goat cheese, so that the goat cheese is held in place by the prosciutto. Display on a platter and serve.
