Antipasto Skewers


A couple days ago I shared with you a super easy appetizer dish: Caprese Salad Skewers. And because I had some extra mozzarella balls and cherry tomatoes, and plenty of bamboo skewers from that, PLUS extra pepperoni and black olives from the pizza dip, I threw together these: Antipasto Skewers. So fast and super simple. Plus you can make these waaaay ahead of time and dress them when they're made or even just before serving.

Another great thing about these is that they are so versatile. Don't like tomatoes? Leave them off and add artichoke hearts. Or sub green olives for the cheese. You can also use Italian dressing instead of a balsamic vinaigrette. And of course this recipe is easily doubled and tripled for the really big parties you're attending. So go ahead and have fun with it! 

Antipasto Skewers

24 6" bamboo skewers
24 red cherry tomatoes
24 yellow cherry tomatoes
24 slices dry salami
24 slices pepperoni
24 black olives
24 pieces tortellini pasta, cooked according to package directions (I prefer the refrigerated pastas)
24 small mozzarella balls
1/4 cup balsamic vinaigrette (homemade or store bought)

Other items that would be good: roasted red peppers, artichoke hearts, small marinated mushrooms, pickled garlic cloves, green olives, cubed smoked gouda cheese

Skewer ingredients on skewers in any order you'd like. Place finished skewers on a platter and drizzle with balsamic vinaigrette. Serve.
