Cheddar, Bacon, and Apple Grilled Cheese


Did you know that the month of April is National Grilled Cheese Month?? I mean, who comes up with this stuff (I bet Adam would know. He is chock full of weird trivia stuff like that!)? Not that I'm complaining. I love cheese. LOVE. And I can't say no to it when it's melty and gooey in between two slices of toasty bread. Whether it's plain jane or decked out to the nines, I enjoy these tasty little sandwiches. They definitely hold a spot in the comfort food section of my heart.

And don't be shocked, but yes, this is another bacon recipe. Not that I'm growing fond of bacon. Don't want you to get the wrong idea. But let's say our relationship is getting closer. Like now we're acquaintances instead of fight-to-the-death enemies. And maybe someday we'll be friends. MAYBE. For now, I'll just enjoy it smothered in cheese. Melty cheese. With crisp, sweet apples. On toasty bread. Oh, and you should enjoy it too. Please. Feel free.

Cheddar, Bacon, and Apple Grilled Cheese

For two sandwiches:
4 slices bread
4 Tbsp butter, softened
8 slices sharp cheddar cheese (plain cheddar cheese, extra sharp white cheddar, smoked cheddar or fontina cheeses would work nicely)
1/2 an apple, sliced thinly (I used Fuji)
6-8 strips of bacon, cooked until crispy

Preheat a griddle over medium heat. Spread one side of each piece of bread with approximately 1 Tbsp of butter. Place one slice of bread, butter side down, on preheated griddle. Top bread with two slices cheese, 6 slices of apple, 3-4 strips of bacon, and two more slices of cheese. Place another slice of bread, butter side up, on top of the last two slices of cheese. Flip sandwich when bottom is brown and crispy (approximately 3-5 minutes). Grill for 3-5 minutes or until other side is brown and crispy. Repeat with remaining ingredients to make a second sandwich.
