Did you watch the Super Bowl? It was definitely on at our house, but Adam was the only one who was really watching it. I was in the kitchen making our "Super Bowl" spread. It gave me a great excuse to have noshables for dinner. You know, foods that are mostly consumed using your fingers. That may or may not be healthy for you. That you would usually serve in a party environment. Only we didn't have a party. It was just the five of us. And I made enough food to feed 20 people. But it gave me an excellent opportunity to make a bunch of recipes that have been on my to-do list. There were definitely some losers and a few winners.
This mix was most definitely a winner. In fact I made it earlier in the week (I was trying to get some of the food pre-made before Sunday) and Adam convinced me to let the first batch become "free game" and just make a second batch for Sunday. 48 hours later and batch #1 was gone. Gone baby gone. Apparently it was good. So, in order to save batch #2 from receiving the same fate before Sunday could even get here, I waited until Sunday to make it. It has lasted longer than two days this time, but barely.
So, this snack mix is great. As a snack, for a party, or even in cute little Valentine's treat bags.
Peanut Butter Snack Mix
2 cups round chocolate cereal puffs
4 cups graham cracker cereal squares
1 cup pretzel sticks
1 cup dry roasted peanuts
1 cup peanut butter candy pieces
11 oz white chocolate, chopped
1 Tbsp butter
2 Tbsp peanut butter
3/4 cup powdered sugar
1 cup peanut butter cups, chopped
1/2 cup chocolate chips (optional)
In a large bowl, combine chocolate cereal, graham cracker cereal, pretzels, peanuts, and peanut butter candy pieces. In a medium microwave safe bowl, combine white chocolate, butter, and peanut butter. Microwave for approximately one minute or until the chocolate is melted. Stir to combine the butter and peanut butter thoroughly. Pour over the cereal mixture and stir to coat. This should take a couple minutes. Once cereal has been coated. Add in powdered sugar and continue stirring to coat. Add in peanut butter cups. Set aside and allow chocolate to solidify (a couple hours). Now, you can choose to serve it as is, or you can spread it out on wax paper. In a small bowl, microwave the chocolate chips in 30 second intervals until melted. Using a spoon, drizzle chocolate over the snack mix. Allow to set (again another couple hours). Once set, place in an airtight container.
